Recipes for cooking lesson:

Baked prawn salad

You will need:

Some prawns
Mayonnaise
A whole orange
Honey/maple syrup
Dill weed (optional)

1) Shell the prawns thoroughly including the tail.
2) Bake the prawns in an oven at 150-200 degrees C. This is a dry cooking method and helps to draw out all the moisture in the prawns to make it crunchy instead of chewy.
3) Bake until the prawns have turned red and have become opaque and remove them from the oven.
4) Add mayonnaise, honey/maple syrup and a little pure orange juice. Grapefruit juice will also do nicely. Yogurt and sour cream are some other things you may want to consider adding. Take care not to add too much juice as the dressing will become too wet.
5) Add also a little dill weed (herb). This can be found at NTUC and goes well with all sorts of seafood.
6) No quantity is mentioned as everything is mixed together according to your taste and how many prawns you wish to cook.
7) You can also add any vegetables you like with the prawns.
8) Serve cold! Cheers!

Tomato baked rice

You will need:

Tomato sauce (I recommend Prego brand)
Minced meat
Rice
Grated cheddar cheese

1) Heat up a pan with oil. Toss some of the mince meat and stir-fry until it is brown and cooked.
2) Add the tomato sauce and let the entire mixture come to a boil. Turn off the fire.
3) Get a baking pan or cake pan or any bowl or container that can survive the oven.
4) In that pan or bowl, mix the rice with the tomato sauce until all the rice is covered. Do not add too much or too little sauce. Throw in some of the grated cheese and mix together.
5) Flatten the top of the rice-tomato mixture and cover it with cheese.
6) Bake it in an oven until the cheese turns brown on the top at about 150-200 degrees C.
7) MUST be served warm.


Pan-seared fish


You will need:

Fish fillet (I used the cheap frozen Sutchi Fillets found in NTUC)
Lemon pepper seasoning (found at NTUC)
Alternatively you can use salt and pepper and lemon juice.

1) Rinse the fish lightly with water and blot dry.
2) Season with the lemon pepper seasoning on both sides.
3) Heat up a pan with some oil and sear the fish until it is brown on both sides.
4) It is ready to be served. Simple and quick.
